Today I have two living salt recipes for you that you can enjoy instead of foods with refind salt: oven-roasted potatoes and oven-roasted asparagus. Oven-roasted potatoes are an easy healthy alternative to French fries and potato chips, and roasting asparagus in the oven really concentrates their flavor. Delicious!

LIVING SALT OVEN-ROASTED POTATOES

3 potatoes (russet, yukon gold, and red new potatoes all woek well)
2-3 tablespoons extra virgin olive oil
Himalayan Living Salt
freshly ground black pepper

1. Preheat oven to 500 degrees F.
2. Cut the potatoes in half lengthwise, then again into quarters, and then into long thin wedges.
3. Place the wedges into a baking pan. Toss the wedges with olive oil to coat and spread them out in a single layer in the pan.
4. Sprinkle with Himalayan Living Salt and pepper to taste.
5. Roast potatoes for 15 to 20 minutes, then turn and roast 10 minutes more.
6. Serve hot from the oven.

LIVING SALT OVEN-ROASTTED ASPARAGUS

1 lb asparagus
2-3 tablespoons extra virgin olive oil
Himalayan Living Salt

1. Preheat oven to 425 degrees F.
2. Snap the bottom end off the asparagus spears.
3. Place the asparagus into a baking pan. Toss with olive oil to coat and spread them out in a single layer in the pan.
4. Sprinkle with Himalayan Living Salt to taste.
5. Roast potatoes for 10 to 15 minutes--shorter for crispier asparagus, longer for softer. Keep an eye on them as they will burn quickly once they are cooked through.
6. Serve hot from the oven, or chill and add your favorite salad dressing.
